Legendary style and glamour have returned to Detroit with the completion of the unprecedented $200 million restoration of the historic Westin Book Cadillac Hotel. Whether cured, smoked, braised, spit roasted or wood grilled, Symon will search for the highest quality producers and breeds of pork, bison, wild boar and prime dry aged beef.
