The characteristic and philosophy of our type of cuisine, following the ancestral technique of using different types of firewood, fire, charcoal and the perfumed trace of the fumes, lead our guests to an experience together so that they can take away our essence, Gastronomic.
Stone, wood and steel would be elements of our restaurant model, working with meats from our place which will be one of the best dish of our menu ..., also including fish, seafood and our indisputable product from our organic garden, the concept is to make a kitchen based on our embers rescuing the best of each ingredient.
In a green environment around, immersed in a farm with horses and cows, we will have some handmade wooden cellars to season our cuts of meat where it would be in view of our guests, we will use ancestral methods to make our seasonings and thus be unique in the market of restaurants in embers.
The tableware for our MEAT CUTS would be SALT the protagonist in many of our restaurant dishes, we would use a salt block in which the customer would have the option to detail their salt point and thus be able to savor it in the best way. Our seasoning cavas would be exposed to our clients, this would give them a high level of quality, and they would be made in an artisanal way located in strategic places of the restaurant. Additionally, the grill would be essential to define our gastronomic concept, the kitchen would have a total of 80% of grills, almost all the cooking and techniques would be based on our embers.
"Technique and innovation" with this new concept cannot be absent, we would have in our dishes with different smoked, charcoal toasted, false caviar, toasted bones, burned herbs in front of the customer, we would have various types and colors of salt.
The stone; It would be another great protagonist of our tableware, we will have various nuances and designs in river stones made by hand, but with our identity and creativity.

The development of Rancho El Yugo Restaurant will be expressed in the balance between the technique of chef and his respect for the LOCAL GUANACASTECO product, but with a very personalized and a fusion with Latin cuisine. Making a gastronomic concept allows you to create a personalized evening dress, a job in which you combines the belonging of the employees to a unique project that conveys an aesthetic brand image attractive and high power of conviction.
La Huerta… in our restaurant we will place a lot of emphasis on the freshness of the ingredients, but we will also guarantee that no chemical products are used in its cultivation. The result is a meal richer, healthier and more natural.
In this concept it would be a Latin cuisine with Guanacaste fusion, where we will use the local product, meat, fish and seafood based on a Guanacaste culinary tradition; in this new model we would have a great participation of the servers where they will be the bastion of offering and gastronomic experience of our clients.
Breakfast: The options will vary from the Typical Costa Rican, to the American and Continental, in addition to Light options, Cereals among others, innovated with seasons according to occupation and buffet on weekends. Taking advantage of the resources of the farm, artisan cheeses will be processed and different types of bread (white, wholemeal, brioche, etc ...) made in our ovens.
Lunch & Dinner: Our menus for lunch and dinner include national and international dishes, including the Costa Ricantraditional dish named "casado" within the lunch options.
The products from our organic garden have a transcendental role in this menu for the different salads and side dishes, very focused on recipes and Latin products will be the emblem of the menu without forget the fusion with the Guanacaste Creole.
