Property Description

Jasper Hotel is a new build 125 room luxury hotel for the emerging community of Fargo, North Dakota and the surrounding area. Our signature restaurant, Rosewild was inspired by the Dakota Plains and traditional Rustic-Nordic cooking practices; Rosewild features rustic preparations that rely on preservation, fermentation, and foraging of the land. The libations at the bar feature thoughtful renditions on classic cocktails, crafted local beers and an extensive wine list including regional natural wine. Dine at Rosewild. Inspired by the Dakota Plains and traditional Rustic-Nordic cooking practices. Rosewild features rustic preparations that rely on preservation, fermentation, and foraging of the land. The libations at the bar are second to none in the Dakotas and feature thoughtful renditions on classic cocktails and a curated selection of craft beers and spirits. Comfortable, delicious and unpretentious are our wheelhouse. Rustic yet refined, Rosewild honors and elevates Dakotan sensibilities and rural Nordic foraging, butchery and fermentation techniques. Farm-to-table taken to the hyper local, we source and work with regional farmers, ranchers, and other vendors in creating seasonal menus full of hearty vegetables and sharable fish and meat dishes. Sip a locally crafted microbrew, an approachable natural wine or a classic cocktail with an in-house pickled and brined garnish.
